To limit cross-contamination while preparing a meal, separate raw foods from cooked or ready-to-eat foods. This separation applies to equipment and dishes, as well as storage.
Keep one chopping board for raw meat and fish and another for cooked foods and clean vegetables. Using a single board for everything in succession does not maintain this separation.
Also use different dishes for raw and cooked products. A dish that has held raw food needs cleaning before it is used for ready-to-eat food.
Wash utensils between different tasks and clean equipment that comes into contact with food. Also wash your hands with soap before preparing or handling food.
Wash fruit and vegetables with drinking-quality water before preparing or eating them. Those sold in bags or trays also need washing unless the label says they are already washed or ready to use.
When storing food, separate food categories in suitable containers. Follow the storage conditions and dates on the packaging; separation complements these precautions.
