Mayonnaise or chocolate mousse may contain raw eggs even when it no longer looks like an egg. Check the recipe before choosing this sauce or dessert.

Eggs and dishes made with raw eggs can transmit Salmonella. Cold does not destroy these bacteria: refrigerating a preparation does not make it sterile.

Make these recipes as close as possible to eating and keep them chilled in between. Plan storage before starting rather than leaving the dish waiting on the table.

The consumer hygiene guide advises putting homemade raw-egg preparations in the coldest refrigerator zone below 4 °C and consuming them within the same day at the latest.

Santé publique France recommends that young children, pregnant women and older people avoid raw or undercooked eggs. Choose a suitable recipe before preparing the meal.

Wash your hands before and after handling eggs. The guide advises discarding cracked or broken eggs and not washing their shells; have clean utensils ready too.
